Cucumber subs with turkey, green onions and Laughing Cow cheese! Yum!! All the goodness without all that bread!
Cucumber subs:
medium to large cucumbers
turkey, ham, or other deli meat slices or shaved
bacon (optional)
green onions (optional)
tomatoes (optional)
any sandwich fillers (optional)
Laughing Cow cheese or mayo or cream cheese or any other condiment
Cut the cucumber length-wise, from tip to tip. Scoop out the inside of the cucumber to make room for your sandwich fillers. Add meat, veggies, and other sandwich makings to the inside of the cucumber. Place one half of the cucumber on the other half. Enjoy!!

Deletedefinitely going to try this for sure......I will use bacon bits and green onions but will mix these into the cheese so they do not fall out of the *sandwich* and my choice will be ham

ReplyDeleteI tried this recipe loved it made a couple of changes instead of the Laughing Cow Cheese which is a processed cheese I used hard cheese I use monterey jack, Oaxaca, soft mozzarella. It's really good. Who said sandwiches had to be made with bread?

ReplyDeletePeel a cucumber, cut it like a canoe, scoop seeds out with a spoon and cut into "dippers"- you can get 12 out of a nice sized one. Kids love these- Just their size to handle and they taste like melons so big kids like us like them too! Thanks for sharing!♡ Penny Irvin

ReplyDeleteI peel a cuke and cut one end open and scoop out the seeds. Then I fill it with tuna fish. You can add the fillings from this recipe and it won't fall out.

ReplyDeleteSounds great, only I would use chili or jalapeños cream cheese since I like it a little spicy with spring onions and the dark red tomatoes since they have a more rich flavor. Chop it up mix it Al in the cheese and add the chicken bacon and the chicken ham. Yum !
