Banana Crunch Bread

Banana Crunch Bread


INGREDIENTS:

1 cup sugar
1 extra-large egg
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, softened, 1 stick
1/2 cup buttermilk
2 medium bananas, mashed, 1 cup
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon, optional (I used 1/4 tsp)

CRUMB TOPPING:

1/2 cup confectioners powdered sugar
1/2 cup all purpose flour
Dash of salt
4 tablespoons unsalted butter, melted, 1/2 stick

How to make it:

Spray or grease the bottom of a standard loaf pan (mine was 1 1/2 qts. capacity). Preheat oven to 350°F.
In a large mixing bowl and using a mixer, beat together the sugar, egg, and vanilla until well combined. Beat in the butter until smooth; beat in the buttermilk and mashed bananas.
In another bowl, whisk together the flour, salt, baking soda, baking powder, and cinnamon, if using. Using a rubber spatula, fold the dry ingredients into the banana mixture just until incorporated. Do not overmix. Pour batter into the prepared loaf pan.
In a small mixing bowl, combine the crumb topping ingredients together using a large fork or the bottom of a wire whisk until mixture resembles peas. Sprinkle the crumbles over the top of the batter.
Bake for 55 to 65 minutes or until center tests done with a toothpick.

Banana Split Brownie Pizza

Banana Split Brownie Pizza

1 (19 1/2 ounce) package brownie mix
1 (8 ounce) package cream cheese, softened
1 (8 ounce) can crushed pineapple, drained
2 tablespoons sugar
1/2 cup nuts
strawberry
banana
chocolate syrup

Directions:
 1 Preheat oven to 375.
 2 Prepare brownie mix according to package directions.
 3 Place parchment paper on 15-inch baking stone.
 4 Pour brownie mixture on paper and spread into 14-inch circle.
 5 Do not bake without parchment paper or batter will run off stone while baking.
 6 Bake 15-20 minutes or until set.
 7 Cool completely.
 8 Mix cream cheese and sugar until smooth. Add drained pineapple and mix well.
 9 Spread over brownie crust.
10 Slice banana and strawberries using Egg Slicer Plus.
11 Chop nuts using Food Chopper or Manual Food Processor.
12 Arrange fruits and nuts on top of cream cheese mixture.
13 Drizzle with chocolate syrup.
14 Chill.

Skinny Shake

Have you tried the Skinny Shake before, it tastes like a Wendy's frosty:
 


3/4 cup Almond Milk
about 15 ice cubes
1/2 tsp Vanilla
1-2 Tbsp unsweetened Cocoa powde
r
1/3 of a Banana

Banana Bites

YUMMY

SUPER EASY to make!


Cut up banana slices and then put peanut butter between them. Put them in the freezer for 1 hour; then cover them in melted chocolate and put them back in the freezer for another 2-3 hours!

Variations:

Use Dark Chocolate instead :)

"I love mixing the peanut butter with the chocolate when I melt it then just dipping the slices that way, it tastes so much like a banana split if you add chopped nuts."

Berry Cheesecake Pudding Salad

Berry Cheesecake Pudding Salad
(Recipe source: Gourmified)

Ingredients:
2 small boxes of instant cheesecake pudding (white chocolate pudding also works)
1 (32 oz) container of low fat strawberry yogurt
1 (16 oz) container of light Cool-Whip
16 oz. frozen mixed berries, partially thawed
3 large fresh bananas, sliced
1 lb. fresh strawberries, sliced

Directions:
Pour yogurt into a large bowl and mix in pudding (it will be kind of lumpy). Fold in the Cool-Whip (the lumps will go away as you stir it). Add all of the fruit and stir to combine. Keep refrigerated.

Frozen Chocolatey Banana Treats

Have a sweet tooth, but don't want to completely ruin your healthy lifestyle, these aren't so bad. Much better than a piece of cake or a cookie. Remember though, everything in moderation!

Depending on what kind of dark chocolate you buy and you can let some of the chocolate run off so that there isn't as much, this won't be so bad. Also, can use natural peanut butter for a more healthier choice.

Cut up banana slices and then put peanut butter between them. Put them in the freezer for 1 hour, then cover them in melted dark chocolate and put them back in the freezer for another 2-3 hours.

ALL NATURAL PANCAKE RECIPE

ALL NATURAL PANCAKE RECIPE... NO PROCESSED ANYTHING!!
 
- 1 ripe banana
- 2 whole eggs

 


That’s it. Just mix together in a bowl and make sure the banana is all mashed. Then spray your pan with some "spray & cook" or coconut oil. On a low to medium heat, scoop some of the batter into the pan & give it about 20-30 sec, flip, and done! Serve and eat!

*Some advice would be to make them small so its easier to flip

Under 250 calories, nearly 14g of protein! No processed anything! These pancakes are gluten free, low calorie.

HEALTHY ANYTIME FREEZER POPS

1 (8 oz) container lemon yogurt
2 cups seedless watermelon, cubed
1 pint fresh strawberries, hulled
1 medium ripe banana, peeled and sliced
8 (7 oz size) paper cups
8 plastic spoons

Put the yogurt and the fruit in a blender, cover, and blend until smooth.
Spoon into paper cups and put in freezer.
Freeze until slushy (about 45 to 55 minutes).
Insert a spoon into each cup, then continue to freeze until solid, for a few more hours.
When ready to eat, take out one paper cup and let sit out on counter for 5 minutes, then peel back the paper cup and eat, using spoon as handle.

Banana-Applesauce-Oat Cookies (no added sugar)

When you have a sweet tooth and want to stay on track, here's a nice treat.

Sugar is NOT an added ingredient.

3 mashed bananas (ripe)
1/3 cup applesauce
2 cups oats
1/4 cup almond milk
1/2 cup raisins (optional)
1 tsp vanilla 
1 tsp cinnamon 

Bake at 350° for 15-20 minutes.

Cream Cheese filled Banana Bread

Cream Cheese filled Banana Bread

1 c sugar
1/2 c butter, softened
2 eggs
3 mashed ripe bananas
1 tsp salt
1 tsp baking soda
3 Tbsp sour cream
2 c flour
1 c chopped nuts


CREAM CHEESE MIXTURE:
8 oz softened cream cheese
1/3 c sugar
1 egg
1 Tbsp flour

Mix 1 cup sugar, butter & 2 eggs. Add bananas, salt, the soda dissolved in sour cream, & 2 cups flour. Mix well and add nuts.

Divide 1/2 of this mixture into 2 greased & floured loaf pans. Combine cream cheese mixture ingredients and spread over mixture in pans. Spread remaining banana bread batter on top.
PS ~ I like to sprinkle a few extra nuts on top or sprinkle top with 1 T. sugar mixed w. 1/2 T. cinnamon before baking. Makes a nice crunchy top. But that's totally optional.
2 Bake at 350 for 1 hour. .... Test for doneness.
Cool and slice. Makes a lovely presentation.
