Chicken Alfredo Casserole!

Chicken Alfredo Casserole! DELICIOUS!!!

Weight Watchers Points 15
Serves 6

2 dry cups pasta (shells or elbow macaroni are really good for this recipe)
1 15-16 oz jar of a GOOD Alfredo sauce
1-2 cups cooked chicken, shredded or chunked
1/2 cup chicken broth
5 oz shredded Parmesan cheese
2 cups shredded mozzarella cheese (one 8 oz bag)
1-1/2 tsp minced garlic
salt and pepper to taste
(you can also add stuff in - like mushrooms, or broccoli!)

Preheat oven to 350*
Prepare pasta according to package directions
In medium bowl, combine pasta, Alfredo sauce, cooked chicken, chicken broth, garlic, salt and pepper, shredded Parmesan cheese and mix well
Grease 9x13 baking dish
Pour chicken mixture into baking dish
Sprinkle mozzarella cheese on top
Bake uncovered for 30-35 minutes

Loaded Baked Potato Casserole


A delicious “loaded” mashed potato recipe made with Kraft Fresh Take cheese & breadcrumb mix.


Ingredients

•2 cups mashed potatoes (fresh or instant)
•2 cups steamed broccoli
•2 oz real bacon bits
•1 tbsp cream cheese
•6 oz package Kraft Fresh Take Cheddar Jack & Bacon Mix
•Sour cream (opt)
•Chives (opt)


Instructions

1. Mix 1 tbsp cream cheese into mashed potatoes.
2. Stir in steamed broccoli and bacon bits.
3. Spread mashed potato mixture into a casserole dish.
4. Open Kraft Fresh Take package to mix cheese and breadcrumbs.
5. Cover mashed potatoes with Kraft Fresh Take mix.
6. Bake for 20 minutes at 375 degrees.
7. Remove from oven, dish out portions and serve with sour cream and chives (optional).

Oriental Ramen Broccoli Cole Slaw

2 (3 ounce) packages beef-flavor ramen noodles
2 (8 1/2 ounce) packages broccoli coleslaw mix
1 cup toasted slivered almonds
1 cup sunflower seed
1/2 bunch green onion, chopped
1/2 cup sugar
3/4 cup oil
1/3 cup white vinegar

Directions:

1. Before opening noodles, crush into 1 inch pieces. Open packages and set aside flavor packets.
2. Place noodles in bottom of large serving bowl. Top noodles with broccoli slaw, then sprinkle with almonds and sunflower kernels, and green onions.
3. In a separate bowl combine sugar, oil, vinegar, and flavor packets from noodles. Pour over slaw, cover and chill up to 24 hours.
4. Toss before serving.

Broccoli Cheese Soup for the Crock Pot


1/2 cup green pepper, chopped
1/2 cup onion, chopped
2 tablespoons butter or 2 tablespoons margarine
1 (10 ounce) can cream of chicken soup
1 1/2 cups milk
1 lb Velveeta cheese, cubed
1 (10 ounce) package frozen chopped broccoli

Directions:

1 Sauté onion and green pepper in butter.
2 Combine all ingredients on low in crockpot for 3-4 hours. Do not add salt.

CROCKPOT BEEF AND BROCCOLI

CROCKPOT BEEF AND BROCCOLI


Ingredients
1 pound boneless beef chuck roast, sliced into thin strips
1 cup beef consumme
½ cup soy sauce
⅓ cup brown sugar or honey
1 tablespoon sesame oil
3 garlic cloves, minced
2 tablespoons cornstarch
2 tablespoons cooled sauce from the crock pot after being cooked
Fresh broccoli florets (as many as desired)
Hot cooked rice (brown rice, or riced cauliflower)

Directions
1. Place beef in a crock pot.
2. In a small bowl, combine consomme, soy sauce, brown sugar/honey, oil, and garlic. Pour over beef. Cook on low for 6-8 hours.
3. In a cup, stir cornstarch and sauce form the crock pot until smooth. Add to crock pot. Stir well to combine. (If your sauce is not thickening, try bringing your sauce to a boil on the stovetop with the corn starch mixture. Boil until your desired consistency is reached).
4. Add broccoli to the crock pot. Stir to combine.
5. Cover and cook an additional 30 minutes on high (the sauce has to boil for it to thicken).
6. Serve over hot cooked rice.

Cracker Barrel Broccoli Cheddar Chicken

Ingredients

4 boneless skinless chicken breasts
1 can of Campbell's Cheddar Cheese Soup
1 cup milk
1 1/2 cups Ritz Crackers (one sleeve)
4 tablespoons of melted butter (you can use more)
8 ounces frozen broccoli
4 ounces shredded cheddar cheese
1/2 teaspoon seasoned salt


Instructions

Preheat your oven to 350 degrees.


Make can of Cheddar cheese soup mix according to package directions (one can of soup mix to one can of milk).

Place chicken breasts in a baking dish. Season with seasoned salt.

Pour 3/4 of the prepared soup over the chicken breasts. Add broccoli to chicken that has been covered with the cheddar soup.

Melt butter and combine with Ritz crackers, sprinkle buttered crackers over the broccoli.

Add remaining soup mix, and bake for approximately 45 minutes or until the chicken is done. (Check chicken by cutting the thickest part and look to see that the chicken is uniform in color).

When chicken has been removed from oven, sprinkle with shredded cheddar cheese.
