Chicken Ranch Burgers

Chicken Ranch Burgers

(serves 8 can easily be cut in half)

Ingredients:

2 lbs Ground Chicken (I used Purdue.)
1 cup Panko Breadcrumbs
1 cup Italian Bread crumbs
2 Tbs Dried Onion flakes
2 tsp Season Salt
2 tsp Garlic powder
8 Tbs Ranch Dressing of your choice
4 Tbs BBQ Sauce of your choice
4 Tbs Butter for toasting buns
8 Buns

Directions:

In a medium to large bowl toss together all ingredients (except for the Ranch dressing and Buns)
Grill for 8 minutes on each side.. when cooked through top with 1 Tbs ranch on each burger and serve on toasted roll.

Toasting rolls: coat each roll with a half of a TBS of butter and put under broiler for a few minutes watching to make sure they do not burn.

Ranch Potatoes

Ranch Potatoes


8 -10 medium potatoes, peeled and cut into 1/2 inch cubes
1 can cream of mushroom soup, undiluted
1 1/4 cups milk
1 envelope ranch dressing mix
1 1/2 cups shredded cheddar cheese, divided
salt and pepper
6 slices bacon, cooked and crumbled

Add the potatoes to a saucepan. Add water to cover. Bring to a boil; cook about 10-12 minutes or until potatoes are almost tender; drain. Place drained potatoes into a greased 13x9 inch baking dish.
In a bowl, mix together the soup, milk, salad dressing mix, 1 cup cheese, salt and pepper to taste; pour over potatoes. Sprinkle crumbled bacon and the remaining cheese over the top. Bake, uncovered, at 350° for 25-30 minutes or until potatoes are tender.

Ritz Crackers

Ritz Crackers



1 stick melted butter,
1 packet Ranch dressing mix,
¼ c. grated Parmesan,
1 tbsp. red pepper flakes
1 tsp. garlic powder.
1 box Ritz crackers

~Directions

toss box of Ritz crackers with all 5 ingredients
Bake in 300 degree oven for 15 minutes

Crockpot Ranch Pork chops:

package of boneless pork chops
1 can of Cream of Chicken soup
1 packet dry Ranch dressing mix

In crockpot, layer pork chops, add the cream of chicken soup, then sprinkle dry Ranch dressing all over.
Cover and cook on high for 4 hours OR Low for 6 hours.

The pork chops come out very tender and the flavor is amazing! You also get a good gravy for mashed potatoes.

Beer Battered Pickles

Beer Battered Pickles

These are amazing and crispy!!!! mmmmmm.....

Ingredients:

16 dill pickle spears, drained

Beer Batter~
1 egg
1 (12-oz.) bottle beer
1 tablespoon baking powder
1 teaspoon salt
Pinch cracked black pepper
1/2 tsp dried dill
1 1/2 cups all-purpose flour

Directions:

Place pickles in a strainer drain for 10 minutes.

Dredging Flour~
1/2 cup flour
1/2 tsp dried dill
1/2 tsp seasoning salt
Mix and coat drained pickles.

In a large bowl, whisk together the egg, beer, baking powder, salt, pepper, and dill. Add the flour and whisk until smooth.
In a large sauce pan, pour oil to a depth of 1 1/2 inches and heat over medium-high heat .
Dip flour dredged pickle spears into batter and fry in batches, until golden. Drain paper towels and serve with Dill Ranch dipping sauce.

Dill Ranch~
1/2 cup Ranch
1 tsp dried Dill
1/4 tsp garlic salt

Mix and let stand at least 30 min for flavors to mix.
Enjoy!!!

~Secretly Healthy Spinach Dip~


SO glad I found this! I could eat this stuff for breakfast, lunch and dinner! YUM!

Everyone has someone in their family who doesn't like to eat anything they think is “healthy.” That’s why I have to be super creative with my recipes, and secretive when I use cottage cheese.

Just a general trick, substituting cottage cheese for sour cream reduces that fat and adds a ton of protein to a meal. Just be sure to first blend the cottage cheese and no one will be able to tell the difference.


Spinach Dip Recipe


Ingredients needed:

1 10 oz container of frozen chopped spinach – defrost and squeeze out all the juice
1-2 5 oz cans of sliced water chestnuts – dice into small pieces
1 8 oz container of 1% cottage cheese – blend with a handheld blender or in a traditional blender until smooth and creamy
1 packet ranch dressing

After completing the above tasks, mix all ingredients well, eat, and enjoy!
No baking or cooking needed.

*Note: to make this even healthier make your own ranch mix...Here is my homemade recipe:
Homemade Ranch Mix:
5 tablespoons dried minced onions
7 teaspoons parsley flakes
4 teaspoons salt
1 teaspoon garlic powder
Mix together and store in an air tight container.
For dressing: Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.
For dip: Mix 2 tablespoons dry mix with 2 cups sour cream.
Mix up a few hours before serving, so the flavors all blend.

Such a CUKE idea!! Lol!! totally fabulous idea for a veggie-holic!!

Make a sub sandwich with a cucumber instead of bread...
just cut your cucumber lengthwise, scoop out the seeds, and insert your sandwich ingredients of choice… SUPER EASY!!!

Laughing cow cheese, diced pepper/spring onion, low fat cheese, shredded cheese and low fat turkey/ham would be perfect!!

3 Envelope Roast
 

Ingredients:
3 pound beef roast such as chuck roast
1 envelope of dry Italian salad dressing mix
1 envelope of dry ranch salad dressing mix
1 envelope of dry brown gravy mix
2 cups water

Instructions :
Put the water in a measuring cup that is larger then the amount of water you are using. Now add and mix all three envelopes to the water. Mix until blended completely.
Brown the roast (if desired). Add the meat to your cooker. Pour the water, salad dressing mixture over the roast. In the slow cooker, cook it on high for about 4 hours--on low about 8 hours.

CRACK POTATOES!!!

``SCRACK POTATOES!!!

***Warning, Highly Addictive***


2 (16oz) containers sour cream
2 cups cheddar cheese, shredded
2 (3oz) bags real bacon bits (I use Real BACON!
!!)
2 packages Ranch Dip mix
1 large bag frozen hash brown potatoes


Combine first 4 ingredients, mix in hash browns. Spread into a 9x13 pan. Bake at 400 for 45-60 minutes.

Healthy Ranch Dressing


(Writer's note: If you are like me and LOVE Ranch Dressing but hate the fat & calories that comes along with it that the store brands are full of (ughhh!!!).... Never fear...I have found a recipe that is much healthier without sacrificing any flavor at all! YAY!!!)

Healthy Ranch Dressing

This whole jar of ranch is only 1.75 grams of fat and 255 calories!!!

Ingredients:

1 cup Dannon Oikos Plain Greek Yogurt
1 packet Dry Hidden Valley Ranch Dressing Mix
1/2 cup 1% Milk

Directions:

Whisk ingredients together. Chill 1 hour before serving. This is the perfect consistency and tastes better than bottled... Make your own!!! Store up to 1 week in the fridge.

Ranch, Dry Onion Soup Mix & Taco Seasoning ~ Recipes

Make your own Ranch, Dry Onion Soup Mix, and Taco Seasoning and store in small mason jars....This is soooo much HEALTHIER than those you buy at the store!! Those contain a TON of stuff that is not good for you!!

Taco Seasoning:
1/2 cup chili powder
1/4 cup onion powder
1/8 cup ground cumin
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon sea salt
Put ingredients into a jar and shake.

Dry Onion Soup Mix:
2/3 cup dried, minced onion
3 teaspoons parsley flakes
2 teaspoons onion powder
2 teaspoons turmeric
1 teaspoon celery salt
1 teaspoon sea salt
1 teaspoon sugar
1/2 teaspoon ground pepper

Mix all ingredients in a jar, then give the jar a good shake. I’d recommend shaking the jar to mix the ingredients well before each use.
Use 4 tablespoons in a recipe in place of 1 packet of onion soup mix. Store this in a dry, cool place.

Ranch:
