Cheesy Hashbrown Casserole

Cheesy Potatoes in the slow cooker!


INGREDIENTS
32 ounces frozen diced potatoes
2 cups sour cream
10 ounces cream of chicken soup
2 cups grated cheddar cheese
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon parsley flakes

INSTRUCTIONS
Add all ingredients except for the parsley to the slow cooker. Stir well to combine.
Set slow cooker to low and cook for 4 hours or until potatoes are tender.
Stir well and sprinkle with parsley before serving.

DR. PEPPER ROAST BEEF Share w/your friends!

A delicious recipe for Dr Pepper Roast Beef cooked in a slow cooker. Perfect for busy weeknight suppers.

Ingredients
1 3-5 pound beef roast
1 can Dr Pepper
1 cup water
2 dashes Worcestershire sauce
salt and pepper
3 cloves garlic


Instructions
Place beef roast in slow cooker.
Add in all other ingredients.
Cook for 7 hours on low.
Serve warm with pan juices spooned over the top.

Crockpot Four Bean Chili

This is the easiest, laziest and cheapest recipe of all time, not to mention it’s the perfect comfort food after a long cold day.

Crockpot Four Bean Chili

Ingredients

  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 small green bell pepper, diced
  • 1 carrot, grated
  • 1 small zucchini, grated
  • 1 can diced tomatoes (OR 2 large fresh tomatoes diced)
  • 2 cans black beans, drained (OR 3 cups cooked fresh black beans)
  • 1 can pinto beans, drained (OR 1 1/2 cups cooked fresh pinto beans)
  • 1 can kidney beans, drained (OR 1 1/2 cups cooked fresh kidney beans)
  • 1 can garbanzo beans, drained (OR 1 1/2 cups cooked fresh garbanzo beans)
  • 1/2 cup frozen corn kennels
  • 3 tbs cumin
  • 1 tsp chili powder
  • 1 6oz can tomato paste
  • 1/2 cup water
  • salt, to taste

Method

Step 1

Throw all the ingredients in a crock pot and mix thoroughly. Cook on low for at least four hours, stirring occasionally (every hour or so).

Step 2

Alternatively, if you don't have a crock pot and you have an hour or so to watch the pot, you can sauté the vegetables and add the rest of the ingredients. Cook on medium heat, stirring frequently to avoid burning.

Slow Cooker Chicken and Rice

Slow Cooker 7up Chicken & Rice Recipe


(Recipe from Celebrating Home Magazine)

3 lbs boneless, skinless chicken breasts (I used 4)
10.5 oz. can of cream of chicken soup
12 oz. can of 7UP or lemon lime soda
1 c. rice (Minute Rice is best)
1/4 c. chicken broth

Place chicken breasts in the bottom of your slow cooker. Cover with soup and 7UP. Cover and cook for 2-3 hours on low. Add rice and chicken broth and cook for 2-3 more hours until chicken is cooked through.

Crockpot Orange Chicken


Ingredients:
2 large carrots, peeled and sliced about 1/2-inch thick
2 large red or green bell peppers, cut into 1/2-inch chunks
3 cloves garlic, finely minced
4 boneless skinless chicken breasts
2 tsp. ground ginger
1 tsp. salt
1/2 tsp. pepper
8 ounces orange juice
2 cups Mandarin orange segments or fresh orange segments
2 Green onions, chopped

hot cooked rice

Directions:
Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & frozen orange juice in Crockpot. Cover and cook on LOW 4 to 6 hours. Serve chicken on hot cooked rice on platter. Top with orange segments and green onions. Serve chicken liquid in gravy boat, if desired.

Crockpot Ranch Pork chops:

package of boneless pork chops
1 can of Cream of Chicken soup
1 packet dry Ranch dressing mix

In crockpot, layer pork chops, add the cream of chicken soup, then sprinkle dry Ranch dressing all over.
Cover and cook on high for 4 hours OR Low for 6 hours.

The pork chops come out very tender and the flavor is amazing! You also get a good gravy for mashed potatoes.

Crock-Pot Chicken Pot Pie Soup



Ingredients

1 to 1.5 lbs Cooked Chicken, chunked or shredded
2 Cups Chopped Carrots
1 Cup Frozen Peas
1 Small Onion, chopped
3 Tablespoons Stick Butter
1/8 Teaspoon Salt
1/8 Teaspoon Pepper
1/4 Teaspoon Garlic
Pinch of Thyme
2 Chicken Bouillon Cubes
4 Cups White Milk
1 Cup Chicken Broth
1/2-3/4 Cup Flour

Instructions
  1. Add all ingredient but the flour to the crock-pot.
  2. Cook on low for 5 hours.
  3. Add in flour slowly whisking as you add.
  4. Add in more or less depending on how thick you want it.
  5. Cook on low for 1 additional hour.
  6. Serve.

Easy Crockpot Chicken BBQ

Ingredients:

4 boneless skinless chicken breasts
40 oz. bottle BBQ sauce (I used Sweet Baby Ray’s)

What To Do:

Spray inside of crockpot with non-stick spray.
Place chicken and BBQ sauce in crockpot.
Cook for 3-5 hours on high. Then turn to low until chicken becomes so tender it pulls apart (another 2-4 hours).
Remove from crockpot and shred the chicken by continuing to pull it apart with a fork.
Put shredded chicken back into the crockpot and stir until mixed.
Serve on hamburger buns.
Top with your favorite coleslaw, if desired.

Breakfast casserole in the crock pot!

Wouldn't this be great on a cold, Saturday or Sunday morning? Or how about those family holidays where everyone is together and you need lots of food for breakfast and everyone wants to eat at the same time? What about Mother's Day "breakfast in bed"....or on a school day, when mornings are rushed and kids don't seem to have time for a healthy breakfast. This is a great meal; you wake up and breakfast is served!

While you sleep, your breakfast is cooking.
Wake up, breakfast is served!

 
Ingredients:
1 bag 26 oz. frozen hash browns, or larger
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage - maple, sage or regular sausage.
Salt and pepper
16 oz. bag shredded cheddar cheese
(optional variations listed below)


Directions:
1. Spray crock pot and evenly spread hash browns at the bottom.
2. Crack 12 eggs in a large bowl.
3. Mix well (and slowly) using a whisk.
4. Add the milk.
5. Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
6. Add plenty of salt and lots of fresh pepper. Mix well and set aside.
7. Cook the sausage on high heat, drain and set aside.
8. Add sausage on top of hash browns.
9. Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
10. Mix it up well. Or good, depending on where you're from.
11. Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
12. Turn the crock pot on low for 6-8 hours.

Some fun variations of this recipe. Before cooking (during prep) you can add:

  • chunks of sourdough bread
  • diced chilies
  • salsa
  • diced green onions
  • crumpled or chopped bacon
  • diced ham or Canadian bacon

6 large potatoes, sliced
1 small onion, diced
8 slices bacon, uncooked diced
2 cups shredded cheddar cheese
1 (10 1/2 ounce) can cream of chicken soup


Place half of the sliced potatoes in bottom of crock pot.
Top with half of the onions cheese and bacon.
Repeat layers in order.
Top with cream of chicken soup.
Cook on low for 8 to 10 hours.

{Easy} Slow Cooker Rotisserie-Style Chicken

Ingredients:
 

-1 whole chicken, 3-4 lbs.
-1 recipe herb-butter rub (I have included a choice of recipes below)


Easy Herb-Butter
1/2 packet lipton’s recipe secrets, Savory Herb with Garlic*
4 tbsp. butter, softened


Combine all ingredients.

*I have also used Grill Mates garlic, herb, wine dry marinade mix, and Weber Garlic & Herb dry marinade mix.

Fresh Herb-Butter
4 tbsp. butter, softened
1 tbsp. fresh rosemary
1 tbsp. fresh parsley
1 tbsp. fresh basil
1 tsp minced garlic
1/2 tsp salt
1/4 tsp pepper.


Combine all ingredients.

Instructions:

1. In the bottom of slow cooker, place balled up aluminum foil. (This will keep chicken elevated above juices. If you’d like to make more of a one-pot meal, you can cover the bottom with carrots and potatoes for the same purpose).

2. Rinse chicken and pat dry, placing it on top of the aluminum foil balls. DO NOT ADD WATER. This is very important in giving your chicken that rotisserie-style taste and texture. The chicken releases plenty of juices.

3. Cover chicken liberally with herb-butter rub.

4. For best results, cook on high for 3-4 hours, until chicken is cooked thoroughly, exact time will vary based on size of chicken. You can also cook on low 6-8 hours.

I hope your family enjoys this as much as mine does!

More Tips

Reserve chicken drippings and juice to make your own chicken stock for basically free, and much better than store-bought!  All you need to do is remove all chicken from bones. Replace all bones and any extra skin back into slow-cooker with the drippings and juice. Add water to fill slow-cooker, and cook on low overnight.  If desired, you can add more spices for flavoring, and more vegetables like carrots, peppers, onions, celery, etc. for nutrients and flavor.  Allow to cool and then store in freezer-safe containers in the freezer until needed.

Leftover Ideas

One of the things I love most about this meal is that it’s so versatile for leftovers. I love it when I can cook one thing and use it for different meals that my family loves, so that it’s easy on me without feeling like we’re eating leftovers all week. This meal is perfect for that.
-> Add some chicken together with pasta, california vegetable blend, and alfredo sauce for a baked chicken alfredo.
-> Chicken & dumplings using your leftover chicken and homemade chicken stock
-> Chicken pot-pie casserole
-> Chicken salad sandwiches

You can even freeze the extra chicken for a quick meal any time.

Slow Cooker Creamy Chicken and Wild Rice Soup


1 lb boneless skinless chicken thighs, cut into 1-inch pieces
1/2 cup uncooked wild rice
1/4 cup fresh or frozen chopped onions
2 cans (10 3/4 oz each) condensed cream of potato soup
1 can (14 oz) chicken broth
1/4 teaspoon garlic powder
1 cups frozen sliced carrots
1/2 cup peas
1/2 cup whole kernel corn
1 cup half-and-half or cream


Place chicken in 3 1/2- to 4-quart slow cooker.
In large bowl, mix wild rice, onions, soup, broth and carrots; peas, and corn and pour over chicken.
Cover; cook on Low heat setting 7 to 8 hours.
Stir in half-and-half.
Increase heat setting to High.
Cover; cook 15 to 30 minutes longer or until hot.

For the dumpling on top: Mix 1 cup of Bisquick with some milk to form a soft sticky dough. Drop by large spoonfuls onto soup and cover with lid. Allow to cook for about 15 minutes or until dumpling is cooked through.

Crockpot Apple Butter

Crockpot apple butter -


1 dozen apples, peeled, cored, cubed;
1/2 c water;
1/4 c brown sugar;
1/2 teaspoon cinnamon;
1/2 tsp all spice.

Put the apples, sugar and spices in a crock pot (4 quarts or larger), cover and cook on high for one hour.

Remove the lid, and cook on low stirring occasionally, until the apple butter reaches a spreadable consistency and is dark brown in color

(Can this be canned as I am new to this)

EASY CROCKPOT POTATO SOUP RECIPE:

Ingredients:
 

1 (30 oz.) bag frozen hash-brown potatoes (squared, southern style)
2 (14 oz.) cans chicken broth
1 (10.75 oz.) can cream of chicken soup
1/2c chopped onion
1/3 tsp. ground black pepper
1 (8oz) package cream cheese (softened)
 

Garnish: minced green onion, and/or cheddar cheese and bacon, if desired.

Directions:

1. In a slow cooker, combine potatoes, broth, soup, onion, and pepper.

2. Cover, and cook on low for 5 hours.

3. Stir in cream cheese, cook 30 minutes, stirring occasionally, until combined.

4. Garnish with green onion, and/or cheddar cheese and bacon, if desired.

1/2 cup green pepper, chopped
1/2 cup onion, chopped
2 tablespoons butter or 2 tablespoons margarine
1 (10 ounce) can cream of chicken soup
1 1/2 cups milk
1 lb Velveeta cheese, cubed
1 (10 ounce) package frozen chopped broccoli

Directions:

1 Sauté onion and green pepper in butter.
2 Combine all ingredients on low in crockpot for 3-4 hours. Do not add salt.

Crock Pot Cinnamon Almonds

Great holiday gift idea!

Ingredients:

1 1/2 C. Sugar
1 1/2 C. Brown Sugar
3 Tbsp. Cinnamon
1/8 tsp. Salt
1 Egg White
2 tsp. vanilla
3 Cups Almonds
1/4 C. Water

Directions:

In a medium sized bowl, mix together sugars, cinnamon, and salt. Set aside. In another medium sized bowl, whisk the egg white and vanilla until it’s a little frothy. Add almonds. Make sure the almonds are thoroughly coated in the egg white mixture. Add cinnamon mixture to the almonds and toss until coated.

Thoroughly spray with the stoneware of your crock pot with non-stick cooking spray and add the mixture of almonds and sugars.

Cook on low ( with the lid on) 3-4 hours stirring every 20 minutes. In the last hour, add the 1/4 C. of water and stir well. This ensures a crunchy yummy coating. (*make sure after you’ve added the water that you continue to cook the nuts for another 45 minutes to an hour.)

You have to stir really well, especially as it gets later in the cooking process.

Line a baking sheet with parchment and spread the almonds flat to cool. The almonds will be sticky at this point, so make sure you separate them a little and have no large mounds.

Polish Sausage and Cabbage Soup Crock Pot

2 cups potatoes, cubed and peeled
4 cups cabbage, shredded it fine
1 carrot, shredded it fine
1 large onion, chopped
2 teaspoons caraway seeds, crushed (optional)
1-1/4 lb Polish sausage, cooked, halved lengthwise and cut into 1/2 inch slices
4 cups fat free chicken broth or you can just use water
black pepper and salt to taste

Directions:
Place potatoes, cabbage, carrot, onion, caraway seeds, sausage, pepper and salt in crock pot. Pour broth over all.
Cover, cook on low for 10 - 12 hours or high for 5 - 6 hours.

4-6 chicken breast 
1 btl Sweet Baby Ray's sauce
1/4 c vinegar
1 tsp red pepper flakes
1/4 c brown sugar
1 tsp garlic powder
 


Mix everything but chicken
Place chicken in crockpot (frozen is ok)
Pour sauce mixture over chicken
Cook on low 4-6 hours
