Banana Crunch Bread

Banana Crunch Bread

INGREDIENTS:

1 cup sugar
1 extra-large egg
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, softened, 1 stick
1/2 cup buttermilk
2 medium bananas, mashed, 1 cup
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon, optional (I used 1/4 tsp)

CRUMB TOPPING:

1/2 cup confectioners powdered sugar
1/2 cup all purpose flour
Dash of salt
4 tablespoons unsalted butter, melted, 1/2 stick

How to make it:

Spray or grease the bottom of a standard loaf pan (mine was 1 1/2 qts. capacity). Preheat oven to 350°F.
In a large mixing bowl and using a mixer, beat together the sugar, egg, and vanilla until well combined. Beat in the butter until smooth; beat in the buttermilk and mashed bananas.
In another bowl, whisk together the flour, salt, baking soda, baking powder, and cinnamon, if using. Using a rubber spatula, fold the dry ingredients into the banana mixture just until incorporated. Do not overmix. Pour batter into the prepared loaf pan.
In a small mixing bowl, combine the crumb topping ingredients together using a large fork or the bottom of a wire whisk until mixture resembles peas. Sprinkle the crumbles over the top of the batter.
Bake for 55 to 65 minutes or until center tests done with a toothpick.

AUTUMN APPLE BREAD

AUTUMN APPLE BREAD

(This is probably one of the best apple bread recipes I have ever tasted. This delirious and moist Apple Bread will not last long. Make plenty!)

Ingredients:

1 cup oil
3 eggs
2 cups sugar
1 tsp. vanilla
4 cups apples, diced
3 cups all-purpose flour
3 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 cup chopped nuts (optional but they really do add to the texture and flavor)

Directions:

Preheat oven to 300 degrees F

In a large mixing bowl, combine the oil, eggs, sugar, and vanilla.

In another mixing bowl, sift flour, cinnamon, soda, and salt and add the sifted dry ingredients to oil mixture gradually. Add apples and nuts (if using).

Divide cake mixture into 2 regular loaf pans or 3 foil loaf pans. Put into the oven and bake for 1-1/2 hours. Cool 10 minutes in the pan before serving. For an added touch, you can sprinkle sugar on top before serving.

Yield: 2 loaves of Autumn Apple Bread

Apple Braid

Apple Braid

For the Apple Filling:

3 medium-size Granny Smith apples
3 tablespoons granulated sugar
1 1/2 teaspoons cinnamon
2 teaspoons lemon juice

For the Bread:
(note: before you panic about making bread, I have done this recipe using Pillsbury Crescent Roll Dough that I simply roll out & pinch the seams closed and then proceed with the slicing - so if you don't want to make bread dough - try this shortcut!)

2 1/2 cups bread flour
1/4 cup granulated sugar
1 tablespoon instant yeast (I prefer SAF Instant Yeast)
3/4 teaspoon salt
1 cup warm water
2 1/4 teaspoons vegetable oil

For the Glaze:

1/3 cup confectioner’s sugar, sifted
5 teaspoons whipping cream
1/2 teaspoon vanilla extract
Pinch of kosher salt
Pinch of nutmeg

Preheat the oven to 350 degrees Fahrenheit.

Make the Apple Filling: Peel, core, and slice the apples into thin slices, then cut the slices in half. Toss the apple pieces with the sugar, cinnamon, and lemon juice. Bake the apple filling in an 8-inch square baking pan (or 9-inch pie tin) for 15 minutes. Remove from the oven and set aside. (Note: Do not turn the oven off at this point. You will be using it to bake the finished braid.)

Make the Bread: While the apple filling is baking, begin preparing the bread dough. Mix the dry ingredients together in a large mixing bowl. Add the water and oil and mix the dough for 6 minutes using an electric mixer on medium-high speed.

Spray a smooth clean surface with cooking spray and turn the dough out onto the surface. Knead the dough briefly to give it a smooth surface (this will only take several turns of the dough to accomplish). Spray a rolling pin with cooking spray and roll the dough out into a large rectangle, about 12-inches by 16-inches in size. Lift onto a greased baking sheet.

Using a pizza cutter or sharp knife, cut each side into strips about 1-inch wide down each side, leaving the center third of the dough uncut. Spread the apple filling down the middle third of the dough. Fold strips of dough into the center, crisscrossing the filling by alternating strips from each side. Lightly press ends to seal, and straighten out the braid with your hands, if necessary, to straighten.

Bake the braid in the oven for 25 minutes, or until golden brown. Remove from the oven and let the braid cool for several minutes.

Make the Glaze: Whisk together the glaze ingredients in a small bowl until blended and smooth. Brush the glaze in a thick coat over the entire surface of the apple braid while it is still cooling. Carefully transfer the braid to a cooling rack set on a baking sheet (to catch drips) to finish cooling and prevent the bottom of the braid from becoming soggy from sitting in any pooling glaze. Slice and serve.

Peach Upside Down Cake

Peach Upside Down Cake

1/4 cup packed light brown sugar
1 tsp. ground cinnamon
4 medium ripe Georgia peaches, peeled, pitted & sliced
4 tbsp. unsalted butter, softened
1 cup granulated sugar
2 large eggs, room temperature
1/2 cup light sour cream, set out for 30 minutes
2/3 cup Non-fat plain Greek yogurt, divided set out for 30 minutes
1 tsp. vanilla extract
1 1/4 cups (150 grams) unbleached, all-purpose flour
3/4 cup (90 grams) whole wheat pastry flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. kosher salt

  1. Preheat oven to 350°.
  2. Spray a 13″ x 9″ baking dish with baking spray.
  3. In a medium bowl, stir together peach slices, brown sugar and cinnamon.
  4. Spread peach mixture onto the bottom of the baking dish.
  5. In the bowl of an electric mixer, beat together butter, 2 tbsp. Greek yogurt and sugar until light and fluffy, about 5 minutes.
  6. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder and salt.
  7. Turn mixer to low and add eggs one at a time beating well after each addition.
  8. Add sour cream, remaining yogurt and vanilla.  Beat until combined.
  9. Slowly add the flour mixture and mix until just combined.
  10. Dollop the batter over the peaches and carefully even out with a spatula.  Try not to stir up the peaches.
  11. Bake for about 30 minutes or until a toothpick inserted into the middle comes out clean.
  12. Run a knife around the outside of the cake to loosen.
  13. Place a large plate or cutting board on top of the baking dish.  Make sure the plate is large enough to hold the cake.  Turn the cake upside down.  If the cake does not automatically fall onto the plate, lift one corner and very gently push with a knife.  My cake released as soon as I lifted up a corner of the cake.

Caramel Apple Cheesecake Bars

My jaw dropped when I saw this one!

Caramel Apple Cheesecake Bars

Crust:
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup (2 sticks) butter, softened

Cheesecake Filling:
3 (8-ounce) packages cream cheese, softened
3/4 cup sugar, plus 2 tablespoons, divided
3 large eggs
1 1/2 teaspoons vanilla extract

Apples:
3 Granny Smith apples, peeled, cored and finely chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Preheat oven to 350 degrees F.

In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until mixture is crumbly. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.

In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.

In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Serve cold and enjoy!

Streusel Topping:
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened

In a small bowl, combine all ingredients. I like to really combine it by using my clean hands to thoroughly combine the butter into the mixture.

Crockpot Apple Butter

Crockpot apple butter -

1 dozen apples, peeled, cored, cubed;
1/2 c water;
1/4 c brown sugar;
1/2 teaspoon cinnamon;
1/2 tsp all spice.

Put the apples, sugar and spices in a crock pot (4 quarts or larger), cover and cook on high for one hour.

Remove the lid, and cook on low stirring occasionally, until the apple butter reaches a spreadable consistency and is dark brown in color

(Can this be canned as I am new to this)
