Crockpot Four Bean Chili

This is the easiest, laziest and cheapest recipe of all time, not to mention it’s the perfect comfort food after a long cold day.

Crockpot Four Bean Chili

Ingredients

  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 small green bell pepper, diced
  • 1 carrot, grated
  • 1 small zucchini, grated
  • 1 can diced tomatoes (OR 2 large fresh tomatoes diced)
  • 2 cans black beans, drained (OR 3 cups cooked fresh black beans)
  • 1 can pinto beans, drained (OR 1 1/2 cups cooked fresh pinto beans)
  • 1 can kidney beans, drained (OR 1 1/2 cups cooked fresh kidney beans)
  • 1 can garbanzo beans, drained (OR 1 1/2 cups cooked fresh garbanzo beans)
  • 1/2 cup frozen corn kennels
  • 3 tbs cumin
  • 1 tsp chili powder
  • 1 6oz can tomato paste
  • 1/2 cup water
  • salt, to taste

Method

Step 1

Throw all the ingredients in a crock pot and mix thoroughly. Cook on low for at least four hours, stirring occasionally (every hour or so).

Step 2

Alternatively, if you don't have a crock pot and you have an hour or so to watch the pot, you can sauté the vegetables and add the rest of the ingredients. Cook on medium heat, stirring frequently to avoid burning.

CRUSTY PARMESAN- HERB ZUCCHINI BITES

Ingredients
4 medium, fresh zucchini, sliced in half
1/2 cup fresh Parmesan cheese, grated
1-2 tablespoons fresh rosemary & thyme, minced
smidge of olive oil
salt & pepper to taste

Directions
Pre-heat oven to 350F, lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet. Mix cheese and herbs together in a small bowl and sprinkle over the zucchini along with salt and pepper to taste. Bake for 15 minutes and place under the broiler for the last 3-5 minutes until cheese is crispy and browned.

Zucchini Noodles aka: Zoodles

Zucchini Noodles aka: Zoodles 


1. Find 1 large zucchini that is enough for 1 serving. 2. With a Julienne peeler, peel your zucchini skin and all. 

3. Put all of of your Zoodles in a colander and sprinkle with some salt.  Mix the salt all around the Zoodles and let them sit for a few minutes, 10-15 minutes will do.  This will get all of the extra moisture out of the zucchini.  Make sure to drain when you are ready to cook them. 
4. With a tablespoon or so of Olive Oil, cook your Zoodles for a few minutes until they are soft and tender.  Usually around 5 minutes is what I find to be best. 
5. Enjoy!

Crispy Parmesan Zucchini Fries with Chipotle Mayo

OMGoodness!!! YUM!

~Crispy Parmesan Zucchini Fries with Chipotle Mayo~


Ingredients
2 large zucchini
1 egg
1 tablespoon milk
1 cup of Panko Bread Crumbs
1/2 Cup Parmesan Cheese
2 teaspoons olive oil
1/2 teaspoon pepper
Cooking spray

Chipotle Mayo
Store bought
OR
1/3 cup Mayonnaise or Dressing
1/4 cup sour cream
1 chipotle in Adobo (or more to taste)
1 teaspoon lime juice

Chipotle Mayo Instructions:
 
Combine all ingredients and blend until smooth. Set aside. Or Chill.

Zucchini Fries Instructions:

Preheat oven to 400 degrees.

Combine Panko Bread Crumbs, Parmesan Cheese, Pepper & Olive oil. Mix well and set aside. Wash zucchini and cut into fries (leaving skin on). Beat egg & milk together. Toss zucchini in the egg and milk mixture. Dip each zucchini fry into the bread crumb mixture pressing the crumbs to make sure they stick. Place on a parchment lined pan and spray with cooking spray. Bake 18-20 minutes or until crust is crispy. Serve with Chipotle Mayo. Enjoy!!!

Baked, Sliced Zucchini, with variety of toppings

LOW CARB!...YES!! Talk about Yummy!
SIMPLE EASY SIDE or MAIN DISH...


Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend..Any toppings you like! Bake 375 for 20 to 30 minutes until soft.
