Cheesy Hashbrown Casserole

Cheesy Potatoes in the slow cooker!


INGREDIENTS
32 ounces frozen diced potatoes
2 cups sour cream
10 ounces cream of chicken soup
2 cups grated cheddar cheese
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon parsley flakes

INSTRUCTIONS
Add all ingredients except for the parsley to the slow cooker. Stir well to combine.
Set slow cooker to low and cook for 4 hours or until potatoes are tender.
Stir well and sprinkle with parsley before serving.

Ham and Cheese Crescent Roll-Ups

Ham and Cheese Crescent Roll-Ups


Ingredients: 

1 can (8 oz) refrigerated Sweet Hawaiian Crescent rolls
deli sliced ham sandwich meat
slices of your choice of cheese (swiss, cheddar, etc)
butter to drizzle, optional 

Directions: 

Heat oven to 375°F.
Spray large cookie sheet with cooking spray, or line with cooking parchment paper.
Unroll crescent rolls onto large cutting board;
press into 12x8-inch rectangle, pressing seams together.
Top with slices of ham and cheese.
Starting on short edge of rectangle, roll up tightly and pinch seam together.
With serrated knife, cut into 8 slices, about 1 inch wide. 
Arrange on cookie sheet. 
Brush tops and sides of roll-ups with melted butter. 
Bake 17 to 20 minutes or until golden brown.

Beef Enchilada Dip Recipe


Ingredients

  •     1½ - 2 pounds ground beef
  •     ½ medium onion, diced
  •     2 cloves garlic, minced
  •     2 cups enchilada sauce
  •     2 cups grated Monterrey Jack or cheddar cheese
  •     Sour Cream (optional)
  •     Tortilla Chips (optional)

Instructions

1.    Brown ground beef in a large skillet. Drain. Add in onion and garlic and cook until tender, about 3 minutes. Stir in enchilada sauce and top with grated cheese. Cover and allow cheese to melt, about 3 more minutes.
2.    Top with sour cream and serve with tortilla chips.

Grilled Cheesy Garlic Potato Packet


Ingredients:

1/2    teaspoon olive oil
1    Yukon gold potato (8 oz), cut into 1/2-inch pieces
2    teaspoons fresh chopped chives
1/2    teaspoon garlic salt
1    tablespoon grated Parmesan cheese

Directions:

    Step 1 - Heat gas or charcoal grill. Cut 1 (14x12-inch) sheet of heavy-duty foil. Spray one side generously with cooking spray.
    Step 2 - In small bowl, pour oil over potato pieces; toss to coat. Add chives and garlic salt; toss to coat. Sprinkle with cheese; toss to coat.
    Step 3 - Place potatoes on center of foil sheet. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
    Step 4 - Place packet on grill. Cover grill; cook over medium-low heat 15 to 20 minutes, rotating packet 1/2 turn after 8 minutes, until potatoes are golden brown and tender.

Mozzarella Stuffed Meatballs!!!

Back by popular demand!!

OMG these look AMAZINGLY delicious!!!!

Mozzarella Stuffed Meatballs!!!


Ingredients:
1 lb ground beef
1 lb ground pork or mild Italian sausage
1 cup breadcrumbs
1 TBSP Italian seasoning
3 eggs
3 garlic cloves, minced
1 tsp salt
1/2 tsp pepper
---
1/2 lb mozzarella, cut into cubes
Olive Oil
Marinara (jar or homemade)

Directions:
In a large bowl mix beef through pepper. Form into 2" balls. Press a cheese cube in the middle and seal the meat around it.
Heat 1/2" olive oil in a large skillet. Brown meatballs and then set aside on plate.

Pour marinara sauce into pan; bring to a simmer. Add meatballs and simmer until cooked through, about 30 minutes.

Serve over spaghetti or on top of a hoagie!!

Tater Tot Casserole

Tater Tot Casserole


It is very kid friendly and most "big kids" enjoy it too! :))

2 lbs. extra lean ground beef
1 can cream of mushroom soup (I would substitute cream of chicken) ;)
1 16oz Sour Cream

1 cup grated cheddar cheese (or more!)
1 pack frozen tater tots

Preheat Oven For 350 degrees. Grease 13x9 inch pan. Layer the beef on the bottom of the pan, set aside. In a med mixing bowl add sour cream and mushroom soup and mix well. Then layer the mixture on top of the beef, then add cheese. Top with tatter tots. Bake covered for 45 minutes. Uncover and bake 15 minutes longer, adding extra cheese here, if desired. Once cheese is melted you will have One fabulous meal Everyone will enjoy!

Ranch Potatoes

Ranch Potatoes


8 -10 medium potatoes, peeled and cut into 1/2 inch cubes
1 can cream of mushroom soup, undiluted
1 1/4 cups milk
1 envelope ranch dressing mix
1 1/2 cups shredded cheddar cheese, divided
salt and pepper
6 slices bacon, cooked and crumbled

Add the potatoes to a saucepan. Add water to cover. Bring to a boil; cook about 10-12 minutes or until potatoes are almost tender; drain. Place drained potatoes into a greased 13x9 inch baking dish.
In a bowl, mix together the soup, milk, salad dressing mix, 1 cup cheese, salt and pepper to taste; pour over potatoes. Sprinkle crumbled bacon and the remaining cheese over the top. Bake, uncovered, at 350° for 25-30 minutes or until potatoes are tender.

Cucumber subs

If you love cucumbers, you will love this. I saw this on a friends page and I had to repost.


Cucumber subs with turkey, green onions and Laughing Cow cheese! Yum!! All the goodness without all that bread!





Cucumber subs:

medium to large cucumbers
turkey, ham, or other deli meat slices or shaved
bacon (optional)
green onions (optional)
tomatoes (optional)
any sandwich fillers (optional)
Laughing Cow cheese or mayo or cream cheese or any other condiment

Cut the cucumber length-wise, from tip to tip. Scoop out the inside of the cucumber to make room for your sandwich fillers. Add meat, veggies, and other sandwich makings to the inside of the cucumber. Place one half of the cucumber on the other half. Enjoy!!

Bacon Cheeseburger Dip

Bacon Cheeseburger Dip

(careful~ this is addicting!)

1/2 pound ground beef
8 bacon strips (cut into chunks)
1/2 diced onion
1 clove garlic - chopped
4 oz cream cheese (softened)
1 tablespoon worcestershire sauce
2 tablespoons ketchup
1/2 cup sour cream
1/4 cup mayonnaise
1/2 cup mozzarella, shredded
1/2 cup cheddar cheese, shredded

Pre-heat oven to 350º. Cook ground beef; drain.

Cook bacon until crispy (drain; keep 1-1/2 T grease in pan).

Sauté onion and garlic in grease. In a large bowl mix cream cheese, sour cream, mayonnaise, cheese, worcestershire and ketchup. Add beef, bacon, onions and garlic to mixture above and stir until combined.

Pour into baking dish and bake for 15-20 minutes.

I highly recommend you try these out the next time you are craving something different for your breakfast. They’d even be great for a brunch.

Here's what you need:
muffin tin
nonstick spray
ham, slices
tomatoes, diced
shredded cheddar cheese
eggs
salt & pepper, to taste


Here’s what you do:
1) Spray each muffin well with nonstick spray.
2) Place a slice of ham in the bottom of each muffin well.
3) Place about a teaspoon or so of diced tomatoes on top of the ham.
4) Sprinkle some shredded cheddar cheese over the tomatoes.
5) Break one egg into each spot.
6) Sprinkle a little bit of salt and pepper on each.
7) Bake at 180/350 degrees for 18-20 minutes or until the yolks are as firm as you desire and the whites are cooked through.

EASY CALZONES

EASY CALZONES FOR EVERYONE!!


  
2 sheets of pie crust prepared or make your own.(OR 2 pizza crusts.)
5 tomatoes sliced thin.
a Tablespoon Herbs (Rosemary, oregano, basil or any Italian herbs)
Cream cheese,
Parmesan, Mozzarella, Romano (or a blended package of fine shredded cheese)
salt and pepper to taste.
garlic and melted butter

Blend the herbs and cheeses together

Roll out one crust...lay slices of tomatoes all over the crust about 2 fingers apart. Place a spoonful of the blended herbs, cream cheese, and other cheeses on top of the tomatoes. Salt and pepper to taste.

add another sprinkle of cheese over the top of the tomato. Gently place the top pie crust or pizza crust over the top. Seal all the way around. Take a drinking glass and gently cut out each bump of tomato. Make sure each round Calzone is sealed. Use a little water to ensure seal.

Give each Calzone a bath of garlic and melted butter then drop gently into hot grease until they brown or float to top...(You could also bake at 375 until brown.)

Serve with a good marinara sauce.

Breakfast casserole in the crock pot!

Wouldn't this be great on a cold, Saturday or Sunday morning? Or how about those family holidays where everyone is together and you need lots of food for breakfast and everyone wants to eat at the same time? What about Mother's Day "breakfast in bed"....or on a school day, when mornings are rushed and kids don't seem to have time for a healthy breakfast. This is a great meal; you wake up and breakfast is served!


Breakfast casserole in the crock pot!
While you sleep, your breakfast is cooking.
Wake up, breakfast is served!

 
Ingredients:
1 bag 26 oz. frozen hash browns, or larger
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage - maple, sage or regular sausage.
Salt and pepper
16 oz. bag shredded cheddar cheese
(optional variations listed below)


Directions:
1. Spray crock pot and evenly spread hash browns at the bottom.
2. Crack 12 eggs in a large bowl.
3. Mix well (and slowly) using a whisk.
4. Add the milk.
5. Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
6. Add plenty of salt and lots of fresh pepper. Mix well and set aside.
7. Cook the sausage on high heat, drain and set aside.
8. Add sausage on top of hash browns.
9. Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
10. Mix it up well. Or good, depending on where you're from.
11. Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
12. Turn the crock pot on low for 6-8 hours.

Some fun variations of this recipe. Before cooking (during prep) you can add:

  • chunks of sourdough bread
  • diced chilies
  • salsa
  • diced green onions
  • crumpled or chopped bacon
  • diced ham or Canadian bacon

Chicken Alfredo Casserole!

Chicken Alfredo Casserole! DELICIOUS!!!

Weight Watchers Points 15
Serves 6

2 dry cups pasta (shells or elbow macaroni are really good for this recipe)
1 15-16 oz jar of a GOOD Alfredo sauce
1-2 cups cooked chicken, shredded or chunked
1/2 cup chicken broth
5 oz shredded Parmesan cheese
2 cups shredded mozzarella cheese (one 8 oz bag)
1-1/2 tsp minced garlic
salt and pepper to taste
(you can also add stuff in - like mushrooms, or broccoli!)

Preheat oven to 350*
Prepare pasta according to package directions
In medium bowl, combine pasta, Alfredo sauce, cooked chicken, chicken broth, garlic, salt and pepper, shredded Parmesan cheese and mix well
Grease 9x13 baking dish
Pour chicken mixture into baking dish
Sprinkle mozzarella cheese on top
Bake uncovered for 30-35 minutes

6 large potatoes, sliced
1 small onion, diced
8 slices bacon, uncooked diced
2 cups shredded cheddar cheese
1 (10 1/2 ounce) can cream of chicken soup


Place half of the sliced potatoes in bottom of crock pot.
Top with half of the onions cheese and bacon.
Repeat layers in order.
Top with cream of chicken soup.
Cook on low for 8 to 10 hours.

Ingredients
4 medium, fresh zucchini, sliced in half
1/2 cup fresh Parmesan cheese, grated
1-2 tablespoons fresh rosemary & thyme, minced
smidge of olive oil
salt & pepper to taste

Directions
Pre-heat oven to 350F, lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet. Mix cheese and herbs together in a small bowl and sprinkle over the zucchini along with salt and pepper to taste. Bake for 15 minutes and place under the broiler for the last 3-5 minutes until cheese is crispy and browned.

Spaghetti Squash Au Gratin


Tastes like Hash Brown Casserole without all the calories and carbs

1 medium spaghetti squash
2 tablespoons butter
1 small yellow onion, cut in half and very thinly sliced
¼ teaspoon red pepper flakes, or more if you like it spicy
1 teaspoon fresh thyme
½ cup sour cream
½ cup shredded cheddar cheese

  • Cut the spaghetti squash in half and remove the seeds.
  • Place in a covered dish with a ¼ inch of water and microwave for 10 -12 minutes.
  • In a medium sized skillet over medium heat, add the butter, onions, red pepper and thyme and cook until the onions are slightly brown in color.
  • Salt and pepper to taste.
  • Using a fork, scrape the insides of the squash and transfer to a small bowl.
  • Combine the squash, onions, sour cream and half the cheese together and mix well.
  • Transfer the mixture to a buttered baking dish and top with remaining cheese.
  • Place into a 375º for 15 – 20 minutes until golden brown on top.

John Wayne Casserole


Ingredients:

2 pounds ground beef, cooked and drained
1 (1.25-ounce) packet taco seasoning
4 ounces sour cream
4 ounces mayonnaise
8 ounces Cheddar cheese, shredded and divided
1 yellow onion, sliced
2 cups biscuit mix
2 tomatoes, sliced
1 green bell pepper, sliced
1 (4-ounce) can sliced jalapeno peppers


Directions:
1. Heat oven to 325. Brown ground beef and add taco seasoning and water, according to packet instructions; set aside.
2. In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, and half of the onions; set aside.
3. Stir biscuit mix and water (directions on box) to form soft dough. Pat dough on the bottom and one-half-inch up the sides of an 9 x 13 in. greased casserole dish.
4. Sautee remaining onions and bell peppers until slightly tender.
5. On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato slices, green peppers, onions, jalapeno peppers, sour cream mixture and end with remaining shredded cheese.
6. Bake for 30-40 minutes or until edges of dough are lightly browned.

Chicken and Bacon Pasta Bake

Chicken and Bacon Pasta Bake



2 cups pasta (dry measure - will be more cooked), cooked al dente
2 lbs chicken, cooked (approximately)
1 lb bacon
1 onion, diced and lightly sautéed
2 sweet peppers, color of your choice
2 jars of spaghetti sauce
Lots of cheese for on top - you choose!

This is a great way to use leftover chicken, or a precooked if you are in a rush!

Combine al dente pasta (it will cook more in the oven so don't overcook it), cooked chicken in bite size pieces, crumbled bacon, sweet peppers diced, and spaghetti sauce in a 13 x 9 casserole dish (I mixed it in the pasta pot after draining then put it in the casserole dish). Top with cheese (I used Mozzarella but Sharp Cheddar or a mix with Parmesan or just about any other cheese would also be great!) and bake at 325 F for 45 minutes, until cheese is bubbly and starting to brown.

This is a great basic recipe that is really good as is, or perfect for customizing to what you have or what you like. If you are low carb, use spaghetti squash. Don't have peppers, use peas or asparagus or broccoli - what's on hand. Leaving out the bacon would still be good, and if you are vegetarian use Portobello mushrooms instead of the chicken. Throw in some hot peppers or more herbs to flavor it the way your family likes.

If it won't all fit in the 13 x 9 you can freeze some for later!
